Gooseberry Patch {Slow Cooker} Granola



My Mom knows how much I love slow cooker recipes so I was pretty tickled when she got me this Gooseberry Cookbook for Christmas.



 I have quite a few page corners folded down to mark all the recipes that I want to try.
This Oh My Gosh-  Slow Cooker Granola recipe was first in line!
 I've been so excited to share this with all of you.
I have to admit, I was a little intrigued by how the granola was going to become "toasted" in the slow cooker....
It turned out awesome!
 
I barely changed the recipe by replacing regular vegetable oil with Coconut Oil.
The recipe also mentions the option of adding  dried fruits or nuts.  I added chopped pecans to the recipe, then added dried fruit in my cereal bowl and served it over my Homemade Vanilla Cinnamon Almond Milk .
 
Yumm. Yumm. Yumm.
All Natural.  No preservatives.  Good for you!




 Gooseberry Patch {Slow Cooker} Granola                            Print Recipe

  • 5 Cups Long-Cooking Oats, Uncooked
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Pecans, Chopped
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1 Cup Sweetened Flaked Coconut
  • 1/8 teaspoon Salt

Mix all ingredients together and place in a slow cooker sprayed with non-stick vegetable spray (I used sunflower oil spray).  Cover, leaving lid slightly ajar.  Cook on low setting for 5 hours, or until golden, stirring occasionally.  Makes 6 large servings.

One note * This isn't your typical fix-it and forget about it kind of slow cooker recipe, I stirred  the granola every 30 minutes or so, to make sure it was "toasting" evenly.
