Orange Pecan Chicken Salad

What's NOT to love about a recipe that gives you a serving of fruit, veggies, and protein all in one bite?  O.K. - That's one great thing about this light & lovely chicken salad.  How about another....it TASTES as good as it looks! 

I love waldorf salad and this was a nice way to be able to make a meal out of it.  This recipe has a nice combination of sweet & savory.  The orange juice gives a nice "zip" to the dressing.  It makes approximately 4 large sandwiches, but after Hubby ate his sandwich, I caught him spoon feeding himself right out of the bowl...Yep, It's that good!



Orange Pecan Chicken Salad


2 Cups Cubed Cooked Chicken Breast
2 Cups Chopped Cored Gala Apples  (2 medium)
1/2 Cup Halved Seedless Grapes
1/2 Cup Sliced Celery
1/4 Cup Chopped Pecans
1/2 Cup Lite Mayonnaise
1/2 Cup Low Fat Sour Cream
2 1/2 Tablespoons Orange Juice
1 Tablespoon Sugar

Combine Chicken, Apples, Celery, Grapes and Pecans in bowl.  Blend Mayo, Sour Cream, Orange Juice and Sugar.  Stir into Chicken mixture.  An  Apple Slicer  works great for helping with chopping up the apples for this recipe.  It's quite a handy tool for a quick after school snack of apple slices & Hot Fudge Fruit Dip for the kids too!
