Grilled Honey Ginger Chicken 



Since the weather here in Michigan has been so unseasonably warm this week- I've been getting the bug to fire up the grill.  Normally, in winter & early spring my grill becomes a shelf for which my family places everything from bags of cat & rabbit food to empty pop bottles on.  But not today!  Today I will use my lovely outdoor cooking device for what it was intended for!


I've made this chicken many times during the winter & broiled it in my oven. It's a definite family favorite.  The chicken is so moist & full of flavor.  So you can imagine how excited I was to be able to get that chicken out on the grill & cook it the way the recipe was intended.   Let me just say that it did NOT disappoint...


Grilled Honey Ginger Chicken

1/4 Cup Soy Sauce

4 Teaspoons Canola Oil

2 Tablespoons Honey

1 Teaspoon Ginger Powder or 2 Teaspoons fresh grated

1 Teaspoon Minced Garlic or 2 cloves

4 Boneless Skinless Chicken Breasts


I first Tenderize my Chicken Breasts by sealing them in a large gallon size ziploc bag.  Then, use a rolling pin to pound the meat down until they are about 1/2 of their original thickness.  Set Aside.

 Next, In a Small Microwave Safe Bowl, Combine Soy Sauce, oil, honey, ginger, and garlic.  Heat in Microwave on medium for 1 minute, then stir.  Heat again for 30 Seconds, watching closely to prevent boiling.  Pour Soy Sauce Mixture into ziploc bag to cover Chicken.  Marinate in Refrigerator for 15 minutes.

Preheat outdoor grill for medium heat and lightly oil grate.  Cook Chicken on prepared grill at least 8 minutes per side, or until no longer pink and juices run clear.  Baste frequently with remaining marinade.
