There's just something about Sunday mornings... It seems like I put a little extra love into making a meal for my family on this day. The slower pace of early morning and a coffee mug in hand helps me become more laid-back. Maybe that's why this Bacon & Swiss Breakfast Casserole has been my favorite Sunday dish to prepare for so many years & the combination of bacon and three cheeses gives that "extra special" flavor to this casserole.
Bacon & Swiss Breakfast Casserole
1 lb Sliced Bacon, Diced
1 Medium Onion, Chopped
6 Eggs, Lightly Beaten
4 Cups Shredded Hash Brown potatoes, thawed
1 Cup Shredded Swiss Cheese
1 1/2 Cups Small Curd Cottage Cheese
2 Cups Shredded Cheddar Cheese
In Large Skillet, Cook Bacon & Onions until Bacon is Crisp, Drain. In a bowl, Combine Eggs, thawed Hash Browns, Cheddar Cheese, Cottage Cheese, and Swiss Cheese. Stir in Bacon Mixture. Transfer into a greased 9x13 pan. Bake Uncovered at 350 Degrees for 35-40 minutes or until set and bubbly. Let stand for 10 Minutes before serving.
