This recipe saved the day! I had one of those evenings when the kids were going here, there, and everywhere -all at the same time....how do you feed your family something decent when you can't even get them to stay in one place for more than 5 minutes?
I could tie them to their chairs. Hmm.
They're too strong.
Having a slow cooker simmering these meat balls all day guaranteed the kids would be getting more than a bag of popcorn and a bottle of Mountain Dew for dinner.| Not good at making Round Things....Like Meatballs. |
My Son practically tackled me on the way to the dinner table after football practice. An hour later, my daughter and her friend scooped 'em up before heading right back out to cheer in our school's parade.
It was Homecoming Night... (Go Bearcats!)
Hubby then got the remainder of the meatballs when he got home from work later that night. This recipe makes a lot of meatballs. Around our house, the last person home for dinner sometimes gets the "scraps". He probably expected to have to scoop around in the sauce to find meat "stragglers".. but there was plenty left for him. I can't say enough about how nice it is to have warm food ready in the middle of all that rushin' & runnin'....I have to admit though I love it and wouldn't trade it for anything in the world.
I {Heart} being a mom!
Sweet & Saucy Slow Cooker Meatballs
- 1 Cup Milk
- 3/4 Cup Quick Oats
- 3 Tablespoons Finely Chopped Onion
- 1-1/2 Teaspoons Salt
- 1 Teaspoon fine Black Pepper
- 2 Pounds Lean Ground Beef
- 1 Cup Ketchup
- 1/2 Cup Water
- 1/4 Cup BBQ Sauce (I prefer Sweet Baby Rays)
- 2 Tablespoons Brown Sugar
Combine the first 5 ingredients. Crumble Beef over mixture & mix well. Roll into
2 inch balls & place in slow cooker. In separate bowl, combine Ketchup, Water, BBQ Sauce, and Brown Sugar. Pour over meatballs. Cook on low for 6-8 hours or until the meat is no longer pink. Recipe makes approx. 24- 2 inch meatballs
Serve over Mashed Potatoes. (I kept them warm in a separate slow cooker)
