Fresh Mint & Honey Fruit Salad






 It's so  warm & summery outside today. The sun is shining, the birds are singing- Seriously? Is it really only March?

 A perfect day for trying a feelin' like summertime kind of recipe.
 

It combines the Sweetness of Honey & Refreshing Coolness of Mint....


Fresh Mint & Honey Fruit Salad

3-4 Cups Fresh Fruit (Melon, Strawberry, Grapes)
2 1/2 Tablespoons Orange Juice
3 Teaspoons Honey
3 Sprigs Fresh Mint, Finely Chopped or Whole*

Combine all ingredients in a Medium Size Mixing Bowl.  Serve immediately or for a more minty flavor, let marinate for a few hours in refrigerator before serving.

* Whole Mint leaves can be used instead of chopped, Marinate for a few hours in refrigerator & remove before serving.


This is a nice recipe to serve for Brunch with Bacon Swiss Breakfast Casserole or along with an Orange Pecan Chicken Salad Sandwich.
